Matt’s Pancakes



  • 1-1/2 cup milk
  • 1/4 cup white vinegar
  • 2 cups all-purpose flour
  • 1/4 cup white sugar
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1/4 cup butter, melted

In a large bowl, mix together: Milk & Vinegar. Let sit for 5 minutes to Sour.
In a medium Bowl, mix together: Flour, Sugar, Baking Powder, Baking Soda, Salt.
Mix eggs and butter into the Soured Milk
Now.. Pour the Dry Mix into the Milk mixture and whisk until smooth with no lumps
This recipe makes approximately 8 modest sized pancakes, around 6 inches across.

What makes them “Evil”?
Pour your favorite Cooking Oil into the bottom of the pan, until you have a nice pool 1/8 to 1/4 deep – to shallow-fry the batter, under medium-low heat until golden brown, then flip to finish the job. Shallow Frying gives a nice crispy outter crust, resembling fried-dough, while leaving the inside of the pancakes fluffy.
